Cast Iron Pork Chop

1 thick cut of pork chops
1 cup sliced Brussels sprouts
¼  cup (or a handful) of pomegranate seeds
1 cup of sliced purple potatoes
2 tbsp of cranberry sauce
¼ cup chicken stock
Fresh thyme
Olive oil
Salt  & pepper to taste


Season the pork chop with salt and pepper, then top it with cranberry sauce. Place the pork chop in a well-oiled cast iron skillet and add sliced purple potatoes, Brussels sprouts, chicken stock, thyme, and *pomegranate seeds. Bake in the oven for 20 minutes at 400 degrees until pork is cooked through and veggies are soft. 

*You can add the pomegranate seeds before cooking so that they bake in the oven, or you can garnish the dish with them once it comes out of the oven.
