Blueberry & Pomegranate Shortbread Crumble

Ingredients: 

½ cup blueberries
¼ cup pomegranate seeds 
1 tbsp lemon juice
A pinch of nutmeg
A pinch of salt
1 tbsp sugar
½ tbsp flour
3 shortbread cookies
Whipped cream or vanilla ice cream (optional)
Mint for garnish (optional)

Directions: 

In a small bowl, combine the blueberries, pomegranate seeds, lemon juice, nutmeg, cinnamon, salt, flour, and sugar. Microwave for 2 to 3 minutes, stirring every 30 seconds so the fruit doesn’t burn. Transfer the fruit onto a small serving dish and top with crumbled shortbread and a dollop of whipped cream. Use mint for garnish, if desired.
